Sometimes clients have urgent projects, and we skip the whole estimating phase. They just call me, tell me to get it done, then I bill them afterwards. Sometimes I may get a quick check the same day. I need the ability to quickly build and send a fast invoice, get paid, and send/keep a receipt of payment. This should be saved under that client's name.
