This can already be done simply by asking the AI to provide a transcript. I upload a video walkthrough of the job, and I have the AI pull the scope of work from the video. I just tested it by telling the AI “show me a transcript of the videos I uploaded”. It provided a full transcript for each of the 3 videos in that project, and then added a summary of the key points pertinant to the estimate.
